Dealing
with Zucchini
(Too much of a good thing? Here's some ideas for doing
away with the extra!)

» Zucchini
and Corn Sauté
This
is a no brainier - In a non-stick
skillet (the larger, the
better), heat oil. Add zucchini
cut into 1" chunks (as much
as you can get away with).
Stir for about 5 minutes
or until golden. Add corn
niblets (at least 1 cup),
a touch of cumin, salt, and
ground black pepper. I like
to throw in some garlic power
too. Cook for 2 more minutes.
Serve. Hope the kids are
fooled! Want a creamier dish?
My eldest son suggests using
creamed corn.

» Zucchini
Stuffed Omelet
Start
with a basic omelet recipe - 6 eggs whipped, 1/4 cup
milk, salt and pepper to taste. Set the egg mixture aside
while you cook up the filling - sautéed zucchini
slices, Swiss cheese, and garlic. When the mixture is
done, set it aside. Cook the omelet. While the omelet
is still soft in the middle, but done on the outside,
place the zucchini mixture on top. Cook a bit longer
and then carefully slide the Zucchini Stuffed Omelet
off the skillet onto a big plate, making a fold in the
middle. Serve. For a fun variation - sauté onions
with the zucchini - and if your kids actually eat everything
- green and red peppers

Wrapped Zucchini Sticks
This
is right out of last months suggestions for foil wrap
cooking. Just slice the zucchini thin, drizzle well with
oil, season to taste (you might try our O.G. BBQ Rub - delicious),
wrap in foil and cook on the BBQ! Yum.

» Zucchini
Bread (High Altitude Recipe!)
Ingredients:
3 eggs, 2 cups Sugar, 3 tsp Vanilla, 1/2 tsp salt, 1
tsp cinamon, 1 cup oil, 2 cups shredded zucchini, 3 cups
flour, 1 tsp baking soda, 1 tsp baking powder, 1/2 cup
coconut, 1/2 cup mini Chocolate chips
Pre heat
oven to 350, Grease and flour 2 loaf pans, sift together
flour, baking soda, baking powder, salt, cinamon.
Put aside. Beat eggs until fluffy. Add sugar, beat
until thick. Add oil and vanilla. Beat well. Mix
in zucchini, coconut and chocolate chips. Add dry
ingredients, blend well. Turn into pans. Bake until
done - about 50 minutes. Let cool before turning
out onto rack.

Bread (Version 2!)
Ingredients:
1 1/2 cups sugar, 1/3 cups brown
sugar, 3/4 cups oil, 2 eggs,
2 cups flour, 3/4 tsp baking
powder, 3/4 tsp baking soda,
1/2 tsp salt, 2 1/2 tsp cinnamon,
1 1/2 cups shredded zucchini,
3/4 cups walnut pieces
Pre heat oven to 350, Grease and flour 2 loaf pans. Combine
sugars, oil, and eggs and mix. In another bowl, mix flour,
baking powder, soda, salt, and cinnamon. Add to sugar/oil/egg
mixture to moisten. Carefully fold in zucchini and nuts.Turn
into pans, Bake until done (about 55 minutes). Let cool
before turning out onto rack |

Bread (Version 3!)
Ingredients:
3 eggs, 1 tbs lemon zest, 1 cup
oil, 2 cups flour, 1 cup sugar,
2 tsp baking soda, 1 tsp vanilla,
1 tsp baking powder, 2 cups shredded
zucchini, 1 tsp salt, t tsp cinnamon
Pre heat oven to 350, Grease and flour 2 loaf pans. In
a large bowl, beat together eggs, oil, sugar and vanilla.
Slowly add zucchini. Add lemon zest. Mix thoroughly. In
another bowl, combine flour, baking powder, baking soda,
salt and cinnamon. Add contents of bowls together until
completely combined. Turn into pans, bake about 1 hour
and 15 minutes until skewer comes out clean. |

Date
Nut Loaf
Makes just
one loaf - dates replace raisins
and seasonings are a touch different
- still yummy though!
Ingredients:
2 cups
flour,
3/4 tsp
baking
powder,
3/4 tsp
cinamon,
1/2 tsp
soda, 1/2
tsp cardamom,
1/4 tsp
allspice,
1/4 tsp
salt, 3/4
cup dates
in pieces,
1 cup sugar,
2 eggs,
1/2 cup
oil, 1
cup grated
zucchini,
3/4 cup
walnuts.
Preheat oven to 350. Grease 1 loaf pan. Line with waxed
paper. Sift dry ingredients into a bowl. Sprinkle 1 tbs
of mixture on dates. Set aside. Combine sugar, eggs and
oil, beat at medium speed. Add flour and zucchini to egg
mixture, mixint well. Stir in dates and nuts. Pour into
pan. Bake until done - about 70 to 75 minutes. Cool in
pan for 10 minutes, turn out - let cool completely! |

Totally
YUMMY Fritters!
Ingredients:
1 3/4 cups grated zucchini, 1/2 tsp salt, 1 3/4 grated
carrots, 2 tbs butter, 3 eggs beaten, 1/2 cup Parmesan
cheese, 1/3 cup flour, 1 tbs dill weed, salt, pepper, oil
and butter as needed.
Preheat oven
to 350. Mix zucchini and 1/2 tsp
salt - let stand. This pulls out
the water. Meanwhile, saute carrots.
Add in zucchini, eggs, flour and
dill. Season with salt and pepper.
Pour into greased baking pan - bake
20 to 25 mintues. Brush top with
oil - brown under broiler. Cut into
squares.
VARIATION:
We like our
fritters fried
- not baked,
so we follow
the basic directions,
except when
all the ingredients
are mixed -
we drop them
into hot fat
in a frying
pan. Cook till
golden brown,
remove to paper
towels. Serve
with sour cream
and apple sauce.
Don't tell
kids the green
stuff is zucchini
(peel zucchini
if you have
to!) |

Nutty
Stuffed Zucchini
Ingredients: 4 zucchini, 1 onion
- chopped, 1/4 cup walnuts - chopped, 1 tbs. olive oil,
1 teas salt, 1/4 teas black pepper, 1/4 cup bread crumbs,
2 TBS. grated Parmesan cheese, 1 teas parsley, 1/2 teas
thyme, 1/2 teas oregano, 1 TBS. butter.
Heat
oven to 375, cut off one thin lengthwise
slice from each zucchini, and scoop
out the insides (imagine that you
are creating a zucchini boat!). Mix
the chopped up insides with the onion
and walnuts. Sauté the mixture
in hot oil for about 5 minutes, stir
in salt, pepper, bread crumbs, cheese,
parsley, thyme and oregano until
well mixed. Spoon the stuffing into
the zucchini boats and bake for 20
minutes. Brush with melted butter,
bake for another 10 minutes. Serve |

Super
Moist Brownies
This
is serious! Shred zucchini in a food processor, then stir
1 cup into your regular brownie mix. The kids will never
know! |

Juicy
Meat Loaf or Meatballs
Barb
from the Coupon Directory gives us a recipe for
meatballs using ED Inspiration Au Jus- but here's a zucchini
enriched version. Just add 1 cup of shredded zucchini to
each pound of ground meat - then cook as normal or per
Barb's recipe. If your kids are really hesitant eaters
- remove the skin of the zucchini first - those green strings
are a dead give-away. |
